Later this week, probably Wednesday I will doing a recipe renovation on one I saw this past weekend on Mexican Made Easy - Zucchini Tortilla Casserole (Pastel Azteca). I have a whole plan worked out on my low carb, almost paleo version. Very excited! I am not sure what I would without Mexican food in my life .... regularly!
Update... As you can see below from Mike's comment - the Cabbage rolls were definitely a winner - but needed a little salt, pepper, and maybe red pepper flakes, if you roll that way! Here is a picture of them piping hot in the pan....
We served with steamed broccoli over shirataki noodles - the first time we had tried these... not too bad!
While we had the usual roasted veggies ...broccoli, cauliflower, eggplant .... with a piece of chicken, steak or pork on some nights, I also tried my hand at making my own enchiladas, wheat free. I used DJ Foodies all purpose crepes, Maria Emmerich's taco seasoning, my own doctored enchilada sauce and voila! .... Spicy Chicken Enchiladas was born. They were fabulous and honestly, while a lot of work, will totally be made again.
This week's recipe was for a Pork Ramen Crockpot soup. It was a hit with the whole family ....
I bought a larger pork roast than I needed for the Pork Ramen, so we threw it in the crockpot the next day with my husband, Mike's, special low carb BBQ pulled pork spice rub. I decided to throw them in some of DJ Foodie's crepes again (LOVE these), put a little green salsa, some tomatoes, cilantro and cheese on top and toss in the oven for 20 minutes... VOILA! Pulled pork enchiladas lite! I think these would be fun to do with a full sauce like the chicken bake above.
Well another year has gone by with my utter neglect of this blog. I apologize to my few readers - including family and friends - for my lack of posting. Our lives have been quite chaotic this year with many challenges in our family. However, Mike and I are still living the low carb lifestyle having moved even further towards a paleo-low carb lifestyle We buy local, organic and sustainable whenever possible. The majority of our eggs and cream come from a local poultry farm and we have a friend that we buy beef from - totally delicious! We try not to routinely buy processed food. Mike is totally wheat free! I, on the other hand, try hard to be so, but succumb occasionally to Mama Lupe's Low Carb Tortillas. :)
Low Carb Highlights:
I am still maintaining an H1AC within normal range - so still NO DIABETES!
I have begun to test recipes for Maria Emmerich's forthcoming Slow Cooker cookbook
We have moved our cats to a totally grain free diet as well... pricey but worth it
I have made hundreds of fabulous low carb recipes this year and plan to keep on experimenting in years to come - pictures forthcoming & mouth watering! I have gotten much better at adapting some of our old time favorites into healthy, low carb alternatives.... some you cannot even tell the difference!
